Lemon Chia Water

REZolution this past month has been gradually preparing the different recipes from the Tradition in Every Bite Cookbook. The first was the easiest thus far; we started with making simple chia water + fresh lemon. The total amount of time to make this recipe was about 15 minutes, as you want to wait for the chia to fully become gelatinous. Making this chia water was simple, stress free, and easy!


Fresh Berry Chia Pudding

The next recipe was chia pudding with fresh berries. We worked with chia like the previous recipe, but we mixed in some agave and almond milk. We added berries to the top and took pictures outside of IHC’s Multipurpose Room where you can see the red plants in this photo. This chia pudding had a very subtle sweet flavor and freshness to it, so make sure to allow the chia pudding to sit overnight for best results. This recipe was very popular among staff.

Peach and Blueberry Smoothie

Peach and Blueberry Smoothie

Another recipe that was created, as you can see here, is a smoothie. This smoothie consists of peaches, blueberries, almond milk and Greek yogurt. Our cookbook is set to be ready for community before this summer, which would be a great time to make this peach and blueberry smoothie.


Elderberry Glazed Salmon

Moving onto the next recipe, that was a few more steps than the previous ones. As you can see in the photo, the star of the show was our very own elderberry glazed salmon. This recipe included homemade elderberry syrup that was made the day before to allow it to fully set. We glazed graciously across the salmon before and after baking in the oven. After roughly 12 minutes in the oven, dried elderberries that had been rehydrated were added to the top of the salmon to add a well-balanced crunch.

Cactus Salad

Cactus Salad

If you are looking for a quick and fresh recipe to add to a spring or summer evening meal, then this one is for you! We created this Cactus Salad with everyday ingredients, and the prep time was less than an hour. This salad includes cactus, Roma tomatoes, white onion, cilantro, and salt to taste.

You can also add more seasonings if you please or keep the fresh taste by only adding salt.


Three Sisters Salad

The last recipe we’ve made so far was Three Sisters Salad. This fresh salad consisted of butternut squash, corn, and black beans. The other ingredients included olive oil, vinegar, salt, pepper and parsley for garnish. This could be a perfect side dish to honor culture for dinner or a get-together. Make sure to set at least an hour aside to make this recipe, if using fresh butternut squash.
